
How it began...
Aloha! My name is Rey ,
Chef Patisserie and alumni of the
Culinary Institute of the Pacific.
Earlier in my profession, I have been privileged to travel to and learn from distinguished businesses in Japan, Nevada, and California before returning home to Hawai'i.
During my time away, I've worked closely with prestigious Chefs from award wining restaurants, boutique bakeries and a Forbes listed catering company.
During my time as an Executive Pastry Chef , I was deeply motivated by the professionals as well as the cultures around me. Much was gained and refined until my inspirations bloomed and blossomed.
Mahi Kō Market began as
an outlet to satiate my curiosity for ingredients
and share my journey through food.
Overtime my recipes were reflections of Hawaiiʻs many cultures. Flavors focusing on the island's bountiful provisions.
